Lea is seeking an experienced Chef to lead our kitchen and culinary team. This is a full-time position with a base salary plus a commission bonus structure. We have an established and committed team and are excited to find a thoughtful and enthusiastic chef to join us in this vital leadership role. We are seeking an individual who can bring their creative talents as well as their leadership and administrative skills to our kitchen to help us reach the next level of service. This position will join our senior staff as we continue to develop our post-Covid food business. Job Description and Responsibilities
Menu - develop a base menu with some seasonally rotating items…including breakfast, lunch, dinner, and prepared foods. We are focused on Italian comfort foods. Production - we are looking for a chef who cooks! We are a small busy team of culinary professionals, our ideal chef gets a little dirty in the kitchen and is happy to jump on the line to help push through a rush. Also someone who is acutely aware of the business demands and knows how to adjust and manage inventory and production to suit the business's needs. Catering - in addition to the daily programs, we offer drop-off and both off- and on-site catering. The chef and their team will be responsible for fulfilling all catering orders. Ordering - keep a streamlined ordering system for ingredients and supplies with a careful eye towards waste, cost and storage space. Costing - keep track of the costs of different menu items, ingredients and labor. Management - lead BOH staff in a positive and thoughtful way. Scheduling, training and management of BOH staff. Staff Training - communication with FOH staff..in regards to menu items, allergen info, tasting notes, storage and packing info…with an awareness of customer service. DOH - keep a clean space and maintain DOH standards Work together with the bakery and pastry teams to share kitchen and storage space and promote Lea bread and Sweet Lea pastry along with the Lea menu.
