Responsibilities: SUMMARY: Under the direction of the Vice President of Food and Beverage the incumbent oversees all wine & beverage service and ensures that all related requirements are met. Ensures a fresh, positive and exciting environment where safety, flawless delivery and execution of product excellence and service are paramount.
ESSENTIAL DUTIES AND RESPONSIBILITIES :
Exhibit conduct in accordance with all Gaming Commission Regulations, Federal and State laws and regulations, and Golden Nugget and departmental policies and procedures. Consistently deliver positive, courteous and professional guest service in all interactions with guests, visitors, vendors and fellow employees. Develop and implement strategies to establish a wine list of repute. Assist with the development and implementation of wine education/wine appreciation programs to raise wine awareness across the complex, lift sales and establish Golden Nugget as a fine wine destination. Identify competitive initiatives and establish alternative strategies to increase wine & liquor sales across the property. Work proactively with F&B Control and Warehouse on wine and beverage stock control and ensure that there is appropriate product rotation, cellaring of premium product and cash flow ratio KPI's (i.e. sales per month/average stock on hand per month) to meet the operational needs of the business within set financial parameters. Place and check beverage requisitions. Provide advice to dining patrons covering sensory evaluation and food and wine matching. Participate in the selling and promotion of fine wine and premium beverages such as Cognacs, Ports and after dinner drinks to guests at all outlets and bars within the Golden Nugget. Liaise with wine suppliers on new and museum releases, trends, promotions and general purchasing. Ensure an open line of communication at all times through briefings and meetings ensuring transfer of product knowledge between front and back of house team members. Ensure a high level of product knowledge and help promote effective communication in all outlets with regard to wine knowledge and sales and specific service criteria. Recruit, select, train, coach, counsel, recognize and retain direct reports who consistently perform actions and behaviors that reinforce excellence in business operations and guest service. Stay abreast of current trends and practices within area of responsibility and communicate pertinent information to management, peers, direct reports and employees as appropriate. Promote positive public/employee relations at all times. Maintain a clean, safe, hazard-free work environment within area of responsibility. Safeguard the confidential information of all employee, department and company records. Demonstrate a commitment to ensuring responsible gaming and responsible alcohol service by discreetly notifying appropriate management of concerns and observations. Ensure prompt and discrete notification to senior management and/or the Ethics Hotline of any observation of illegal acts and/or internal ethics violations. Perform other duties as assigned.
